Preheat your oven to 400°F (200°C).
Wash and halve the baby potatoes, placing them in a large bowl.
Add olive oil, ranch seasoning, salt, and pepper to the bowl and toss well to coat the potatoes.
Spread the seasoned potatoes in a single layer on a baking sheet.
Roast the potatoes for 25-30 minutes or until they are fork-tender and golden.
While the potatoes are roasting, slice the smoked sausage into bite-sized pieces.
After 30 minutes, remove the potatoes from the oven and add the sliced sausage.
Sprinkle shredded cheddar cheese on top and return to the oven for an additional 10 minutes.
Once the cheese is melted and bubbly, remove the baking sheet from the oven.
Garnish with chopped fresh parsley before serving.
