Garlic Butter Steak Bites & Alfredo Tortellini made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients

  • 1 pound sirloin steak cut into bite-sized pieces
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 1 teaspoon fresh rosemary chopped
  • 1 teaspoon fresh thyme chopped
  • Salt and pepper to taste
  • 12 ounces cheese tortellini
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon nutmeg
  • 2 tablespoons chopped parsley for garnish

Method

  1. Heat a large skillet over medium-high heat and add 2 tablespoons of butter.
  2. Once the butter is melted, season the steak pieces with salt and pepper, then add them to the skillet in a single layer.
  3. Cook the steak bites for about 3-4 minutes, until browned on the outside but still medium-rare inside. Remove the steak from the skillet and set aside.
  4. In the same skillet, add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme. Sauté for about 1 minute until fragrant.
  5. Return the steak to the skillet, tossing to coat in the garlic butter mixture. Cook for an additional 1-2 minutes, then remove from heat.
  6. Meanwhile, bring a large pot of salted water to a boil and add the tortellini. Cook according to package instructions until al dente, usually around 3-5 minutes.
  7. In a separate saucepan, combine heavy cream, Parmesan cheese, Italian seasoning, and nutmeg. Heat over medium-low, stirring until the cheese has melted and the sauce is smooth.
  8. Drain the tortellini and add it to the sauce, tossing to coat evenly.
  9. Serve the creamy tortellini on plates, topped with garlic butter steak bites and a sprinkle of chopped parsley for garnish.
