Ingredients
  

  • 3 large green plantains
  • 1 pound large shrimp peeled and deveined
  • 6 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method
 

  1. Peel and cut the plantains.
  2. Fry the plantains.
  3. Mash the fried plantains.
  4. Prepare the garlic shrimp.
  5. Add chicken broth and season.
  6. Combine the shrimp with the mash.
  7. Form the mofongo.
  8. Serve and garnish.
