Ingredients
  

  • 2 pounds beef chuck cut into 1-inch cubes
  • 1 cup fresh cranberries or 1/2 cup dried
  • 2 medium apples peeled and diced
  • 4 cups beef broth
  • 3 medium carrots sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the beef cubes in batches to avoid overcrowding.
  3. Add chopped onions and minced garlic, cooking until translucent.
  4. Stir in the diced carrots, apples, and cranberries.
  5. Pour in the beef broth, and add thyme and bay leaf.

  8. Remove bay leaf before serving.
