Method
- Place chicken breasts in the slow cooker.
- Add corn, bell peppers, and red onion on top of the chicken.
- Sprinkle chili powder, smoked paprika, garlic powder, salt, and black pepper over the mixture.
- Pour the heavy cream evenly over the top.
- Cover and cook on low for 6–8 hours, or high for 3–4 hours.
- In the last 30 minutes of cooking, add crumbled cotija cheese to the slow cooker.
- Once cooked, gently shred the chicken using two forks and stir to combine.
- Serve garnished with fresh cilantro.
