Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 cup corn kernels fresh or frozen
  • 1 cup diced bell peppers red and yellow
  • 1/2 cup chopped red onion
  • 1 cup heavy cream
  • 1/2 cup crumbled cotija cheese
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro for garnish

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Add corn, bell peppers, and red onion on top of the chicken.
  3. Sprinkle chili powder, smoked paprika, garlic powder, salt, and black pepper over the mixture.
  4. Pour the heavy cream evenly over the top.
  5. Cover and cook on low for 6–8 hours, or high for 3–4 hours.
  6. In the last 30 minutes of cooking, add crumbled cotija cheese to the slow cooker.
  7. Once cooked, gently shred the chicken using two forks and stir to combine.
  8. Serve garnished with fresh cilantro.
