Warm, flaky Southern-Style Biscuits smothered in rich sausage gravy create a comforting dish that’s perfect for brunch or any cozy gathering.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 3/4 cup buttermilk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1/2 teaspoon black pepper plus more to taste

Method

  1. Preheat your oven to 450°F (232°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Make a well in the center of the flour mixture and add the buttermilk.
  5. Turn the dough onto a lightly floured surface, knead gently for about 5-6 times, and pat into a 1-inch thick round.
  6. Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper, touching slightly.
  7. Bake the biscuits in the preheated oven for 12-15 minutes until golden brown on top.
  8. While the biscuits are baking, prepare the sausage gravy. In a skillet over medium heat, crumble and cook the sausage until browned and cooked through.
  9. Sprinkle the flour over the cooked sausage and stir to combine, cooking for an additional 2-3 minutes.
  10. Gradually pour in the milk while continuously stirring, until the mixture thickens to your desired consistency.
  11. Season with black pepper and any additional salt to taste, then remove from heat once thickened.
  12. Once the biscuits are done, remove them from the oven and serve them warm, topped with the sausage gravy.
