Ingredients
  

  • 1.5 pounds ground beef
  • 4 medium potatoes diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add ground beef to the pot, cooking until browned.
  4. Stir in the diced potatoes and season with salt and pepper.
  5. Pour in the beef broth, bring to a simmer, and cover.
  6. Simmer until potatoes are fork-tender, about 15-20 minutes.
  7. Once potatoes are tender, sprinkle in shredded cheddar cheese and stir until melted.
