Ingredients
  

  • 12 ounces pasta like rotini or penne
  • 1 can black beans drained and rinsed (15 ounces)
  • 1 can corn drained (15 ounces)
  • 1 cup cherry tomatoes halved
  • 1 bell pepper diced (any color)
  • 1 small red onion diced
  • 1 avocado diced
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup lime juice about 2 limes
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions until al dente, then drain and rinse under cold water.
  2. In a large mixing bowl, combine black beans, corn, cherry tomatoes, bell pepper, red onion, avocado, and cilantro.
  3. In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  4. Pour the dressing over the vegetable mixture and toss to combine everything evenly.
  5. Add the cooled pasta to the bowl and gently mix until evenly incorporated.
  6. Taste and adjust seasoning with additional salt, pepper, or lime juice as needed, then chill for at least 30 minutes before serving.
